Often eaten as a food, especially in Japan, where it’s known as “gobo,” burdock is also known as “beggar’s buttons,” probably for the same reason its prickly burs inspired the inventor of Velcro®. While we’ve never tried them as button alternatives, we do appreciate burdock’s growing reputation in the West as a gentle and supportive herb.* Our organic burdock root is dug up either in early spring before the plant flowers, or in fall, after the plant has died back.
